FLOURLESS PEANUT BUTTER COCONUT CHOCOLATE CHIP COOKIES

INGREDIENTS:
1 cup crunchy peanut butter
1 cup granulated sugar
1 egg
1/2 cup coconut flakes
1/4 cup semisweet chocolate chips
DIRECTIONS:
1. Preheat oven to 350 degrees. Line baking sheets with parchment paper.
2. In a medium bowl combine peanut butter, granulated sugar and egg until well combined. Stir in coconut and chocolate chips. Spoon by heaping tablespoons onto lined baking sheets. Bake for 12-14 minutes or until golden brown. Cool on baking sheets 2 minutes, then remove to wire racks to cool completely.

I made these cookies last night for my husband & parents and they were delicious. I have a feeling they will all be gone before the day is over. I followed the recipe exactly but ended up having to bake them a little bit longer then said (possibly I made them too big) but they turned out perfect. I love how they are so easy and quick. Great for me when I have little time but want something delicious and appealing.
Hi there Deborah, I first saw your recipe linked from Lisa's Vegetarian Kitchen blog. I made these cookies over the weekend, as a gluten-free friend was coming over. I missed out the coconut and added in some vanilla essence, but everything else was the same.
I was sceptical of how they'd turn out, as the recipe seems so counter-intuitive (to my limited baking knowledge), but it's a FANTASTIC recipe. The cookies are moist, flavoursome and so easy to make. Thank you for posting this, I shall be making these cookies more often.
This is a great recipe. I made it months ago before I really got my own blog going. They came out great and my husband was a big fan! :-) Thanks for a great recipe!
