Pumpkin Banana Nut Muffins

This was something I whipped up in yet another of those "I've got bananas that are about to go bad" moment. It's a mix of banana bread and pumpkin bread baked into muffins so my husband can easily take them for breakfast on his way to work. I used applesauce instead of oil and they came out really moist.

INGREDIENTS:
2 cups granulated sugar
1 cup bananas, mashed
1 cup pumpkin puree
3 eggs
1 cup applesauce
1/4 cup water
2 1/2 cups flour
3 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1 1/4 teaspoons baking soda
1/2 teaspoon salt
1 cup walnuts, chopped


DIRECTIONS:

1. Preheat oven to 350 degrees. Grease muffin pans with nonstick cooking spray.
2. In a large mixing bowl beat sugar, bananas, pumpkin, eggs, applesauce and water until well combined.

3. In a medium mixing bowl combine flour, cinnamon, nutmeg, baking soda and salt. Gradually add flour mixture to batter until just combined - do not overmix. Fold in walnuts. Fill muffin tins 2/3 full with batter and bake for 20 minutes or until a toothpick inserted into center of muffins comes out clean.
