White Chocolate Banana Cake

This was something I whipped up during a "oh crap I have a bunch of bananas that are about to go bad" moment - you all know what I'm talking about. I have an ever growing appreciation for white chocolate and thought it would be an interesting combo with bananas. It turned out pretty yummy!

WHITE CHOCOLATE BANANA CAKE

INGREDIENTS:

1 (18.25oz) box white cake mix
1 cup bananas, mashed
2 eggs
1/2 teaspoon cinnamon
1/4 teaspoon ground nutmeg
3/4 cup white chocolate chips

For glaze:
1/2 cup powdered sugar
Water, as needed

White chocolate chips for garnish

DIRECTIONS:

1. Preheat oven to 350 degrees. Spray a 9x13 baking pan with nonstick cooking spray.

2. In a large mixing bowl combine cake mix, bananas, eggs, cinnamon and nutmeg. Stir until well combined. Fold in white chocolate chips. Spoon into prepared baking pan, spreading evenly.


3. Bake in preheated oven for 25-30 minutes or until a toothpick inserted into center of cake comes out clean. Set aside to cool.

4. In a small mixing bowl combine powdered sugar and water, a teaspoon at a time, until it creates a smooth glaze with a consistency for drizzling. Top cooled cake with glaze in a zig zag pattern and garnish with white chocolate chips if desired.
